Banana Bread

250g self-raising flour

120g unsalted butter

120g golden caster sugar

3 small eggs (or 2 large)

3 medium bananas (ripe)

1 tsp cinnamon (optional)

40g chopped walnuts

40g chopped hazelnuts


Preheat oven to 175oC.   Mash the bananas well and mix with the sugar, butter and eggs until mixture is smooth.   Add in your flour and cinnamon and mix well. Mix the nuts through the mixture as evenly as possible (sparing a small amount for the top of your banana bread).   Place the mixture in a lightly greased 2lb loaf tin and sprinkle your remaining nuts on top.   Bake for approx. 50 minutes in the centre of the oven (pierce the cake with a skewer and ensure the skewer comes out clean).   Allow to cool down slightly before removing from the tin to a wire tray.
