Blueberry Muffins

300g plain flour

1 tbsp baking powder

150g golden caster sugar

75g unsalted butter (melted)

2 eggs (beaten)

250ml almond milk

150g blueberries

Pinch of salt


Preheat oven to 200oC. Line your muffin tray with paper cases.   Sift the flour, baking powder and salt into a large mixing bowl and then add the caster sugar.   In another bowl mix the butter, milk and eggs until frothy. Then add to the dry ingredients.   Mix all together and gently add in the blueberries.   Divide the mixture into the muffin tray and bake for 20 minutes.
