Chocolate Mousse

Ingredients:

400g dark chocolate

200g milk chocolate

6 medium eggs

500ml fresh cream

Method:

Melt your chocolate in a bowl over a saucepan of simmering water, once melted leave to cool slightly. Separate your eggs and lightly beat the yokes before adding them to your chocolate mixture. Whip your cream to a ‘soft peak’ level and then gently whisk into your chocolate mixture. Whisk your egg whites until they are stiff and then gently add them to the mixture (folding them in). Once mixed, divide the mousse evenly into glasses or bowls and allow to chill for at least 60 minutes. Top with some chocolate shavings, crushed nuts and fresh fruit for a truly irresistible dessert.
