Crispy Roast Potatoes

1kg potatoes

5 tbsp duck fat

Sea Salt

3 cloves of garlic


Preheat oven to 220oC. Peel your potatoes, cut into large chunks and parboil in salted water for 5 minutes. Heat up the duck fat in a roasting tin with some crushed garlic. Drain off your potatoes and add to the heated duck fat. Make sure to mix the potatoes around the tin well so they all get some oil. Roast for 1 hour or until crispy and golden.
